Sind Lebensmittelabfälle wirklich immer "Müll"? In der industriellen Lebensmittelproduktion fallen oft große Mengen an Nebenprodukten an. Susanne Struck zeigt am Beispiel eines Apfels, wie diese Nebenströme in der Lebensmittelproduktion auch als wertvolle Rohstoffe genutzt werden können – und welche Herausforderungen und Chancen dafür in der Lebensmittelproduktion anstehen. Professor Dr.-Ing. Susanne Struck holds a professorship in Food Technology with focus on Protein-Based Foods in the Faculty of Agriculture, Food and Health at TH OWL, university of applied sciences and arts. Her research focuses on the valorization of food industry by-products and extrusion technologies.
