I make some sort of chicken casserole every week. Sometimes I use rotisserie chicken or I cook it and shred. I add it to a 9x13 baking dish and it usually has a golden brown top. Today I am making what I call a Chicken popper casserole! In this recipe, I swap diced fresh jalapeno for canned mild diced peppers for a less spicy casserole my family loves. It is creamy, cheesy, packed with flavor, and makes for the ultimate comforting weeknight dinner. If you are searching for what to cook with chicken, then try this recipe! *INGREDIENTS* 1 to 1 1/2 lbs chicken (season with onion and garlic powder) 12 oz pack of bacon 10.5 oz can of condensed cream of chicken soup 2 small cans of green chiles 8 oz sour cream 8 oz cream cheese 8 oz cheddar cheese 2 sleeves of Ritz crackers 3 Tbsp butter 9 x 13-inch baking pan If you try this recipe, let me know how your family likes it in the comments below!
