🧁 Ingredients * 2 cups oats (~200 g). It’s best to use old-fashioned rolled oats. * 1 cup milk (240 ml) * 3 eggs * 1 medium carrot * 1 apple * 3 1/2 tbsp oil (50 ml) * 2 tbsp stevia or sugar * 1 tsp baking powder (5 g) * 1 tsp ground cinnamon * A pinch of salt Optional Add-ins: * 2 tbsp raisins (30 g) * 2 tbsp dried apricots, diced (30 g) * ~1/4 cup chopped walnuts Bake at 350°F (175°C) for about 50 minutes. Baking Pan: 8-inch (20 cm) Glaze: * 1 bar (100 g) white or milk chocolate * 1 tbsp neutral oil (15 ml) 💡 TIPS * In the video, I added the apples and walnuts to the egg whites, but it's actually better to fold them into the main batter first, and then gently fold in the egg whites at the very end. This keeps the cake fluffier! * For a more even texture, it’s best to grate the apples. Gently squeeze out the excess juice before adding them to the batter. * Old-fashioned rolled oats work best.
