Leg extensions are literally one of the best quad builders that exists. They directly train the quads through their function of knee extension, they're highly stable so you can just sit down and push them close to failure with full focus, and they also target the rec fem, which is one head of the quads that squat patterns won't develop maximally. I've personally done leg extensions for over 20 years now, including low rep sets to failure, and my knees feel perfectly great. It's almost like loading a joint gradually and progressively over time makes it stronger, not weaker. Just make sure you're adequately warmed up first before moving into your heavier working sets and that you're using an amount of weight you can lift under strict control using a deliberate eccentric, and starting out with slightly higher reps toward the 8-10 range if it's a newer movement for you. But as long as your execution is dialed in, a leg extension paired with a squat pattern is as good as it gets for overall
